Hi, my name is Amy I have lived in Louisiana my entire life and have been in the cosmetology business for over 20 years. I have always had a love for fashion, makeup, hair and traveling which in a way is what led to me starting this blog. I've also always had a love for writing and reading. I have a great husband and 2 children in college and 1 just starting high school. 1 son and 2 daughters. My dad, who I was very close to, passed away one year ago this month and I've sort of been at a loss for a year so my son has trying to get me to start this! He says nothing suits me better than writing about fashion and girl stuff all day! LOL So, here we go! My husband is John and we've been married 24 years, my oldest is my son, Clay, he is 20 and a senior at Louisiana Tech University studying Finance. My oldest daughter is Gracie Claire and she is starting Louisiana Tech this fall and plans to major in marketing also (they are following in their Dad's footsteps) and my youngest daughter is Camille, she will begin her freshman year of high school this fall. Keto Breakfast Casserole

Every Sunday my oldest daughter, who is in college at Louisiana Tech, meal preps for the week, so this week I decided to join her. We both decided to go on the keto plan since so many people have been having such great results from it. I want to share this great breakfast casserole with you, because if all of the food is this good I wont mind being on this plan at all.

Ingredients:

16 oz ground sausage
1 small onion
1 small green pepper
12 oz spinach
12 TBS heavy cream
12 eggs
1 tsp onion powder, garlic powder, salt, pepper
8 oz cheddar cheese

Instructions:

1. Cook the spinach in microwave
2. Cook ground sausage in skillet until brown & put in bowl
3. Thinly slice onion and pepper and cook in same skillet as sausage, then place in bowl
4. When spinach has finished cooking add to sausage
5. Whisk together eggs, heavy cream and spices
6. Add cheese to the sausage mixture then mix in the egg mixture
Transfer to a greased casserole dish and cook at 350 for 50 minutes

This makes a lot and keeps really well in the refrigerator (once it has cooled). We use the glad throw away containers and divide by days. With this casserole my daughter and I each had 5 days. Its great to just take out of the refrigerator and heat in the microwave for 2 minutes then enjoy!
